Try this recipe at home with your family!<\/p>\n<h2>Gallo de Arracache<\/h2>\n<ul>\n<li>2 lbs arracacha, peeled and chopped<\/li>\n<li>1lb lean ground beef, chorizo sausage or Italian sausage<\/li>\n<li>1 cup red bell pepper, finely chopped<\/li>\n<li>1 cup onion, finely chopped<\/li>\n<li>3 tablespoon minced garlic<\/li>\n<li>1 bunch cilantro, chopped<\/li>\n<li>1 tablespoon annatto food coloring<\/li>\n<li>2 tablespoon vegetable oil<\/li>\n<li>1 (5 oz) can tomato paste<\/li>\n<li>2 tablespoon Worcestershire sauce<\/li>\n<li>1 teaspoon oregano, ground<\/li>\n<li>1\/2 teaspoon cumin<\/li>\n<li>Salt and pepper to your liking<\/li>\n<li>Tabasco sauce to taste<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1526\" src=\"https:\/\/www.propertiesincostarica.com\/blog\/wp-content\/uploads\/2016\/11\/Arracacha.jpg\" alt=\"arracacha\" width=\"579\" height=\"434\" srcset=\"https:\/\/www.propertiesincostarica.com\/blog\/wp-content\/uploads\/2016\/11\/Arracacha.jpg 579w, https:\/\/www.propertiesincostarica.com\/blog\/wp-content\/uploads\/2016\/11\/Arracacha-300x225.jpg 300w\" sizes=\"(max-width: 579px) 100vw, 579px\" \/><\/p>\n<h2>Directions<\/h2>\n<p>Heat the oil in a saucepan over medium-high heat adding in the annatto, onions, garlic, red bell pepper, cilantro and tomato paste stirring often for five minutes. Add meat of your choice, arracacha, and 2 cups water, cover for two minutes. Uncover saucepan and simmer, stirring often until arracacha is soft. Add cumin, oregano, salt and pepper to taste.
